Cilantro Lime Rice, Not Your Ordinary Rice

Ingredients:

2 Tbsp unsalted butter butter
1 cup uncooked white long rice
juice and zest 1 large lime
1 15 oz can low sodium chicken broth
1/4 cup finely chopped cilantro
¾ teaspoon pepper
Salt to taste

Directions:

In a skillet melt butter with rice over medium heat and lightly brown rice.

Add the chicken broth and the rest of the ingredients, including juiced lime half.

Bring to a boil, reduce heat, cover and cook for 20 minutes or until liquid is absorbed.

Clarissa Ellis grew up learning to cook with her mom.
